Operation baby-weight-be-gone is in full effect and it’s working. Woot woot!
My carb free lifestyle is working when I actually stay carb free. Monday through Friday, it’s fairly easy. Well, actually Monday through Thursday. When the weekend rolls around, it is so tough to stay on plan. We are an appetizer household and carb free appetizers are few and far between, or at least ones that I actually want to eat. Dips call for chips and that’s where all hell breaks loose!
This past weekend we were strolling the aisles of Sam’s Club, NOT consuming the snacks they are serving throughout the store in an attempt to get shoppers to buy you the sinful items from their frozen food case, and I came across these gems: Parm Crisps. They immediately caught my eye; I flipped over the package and hallelujah, praise the lord, these babies are CARB FREE! I put three bags in my cart…but the hubs looked at me with a bit of a raised eyebrow and suggested we buy one bag, for now, to see if I even like them. He’s so practical sometimes!
I’m almost embarrassed to tell you that I didn’t even wait until we got home to open the bag. I’ve been dying for some crunch. That’s the hardest part about being carb free; you don’t get the crunch of crackers or chips. But that, combined with pregnancy, is how I wound up here in the first place. So, here I am, in the Sam’s Club parking lot, sampling my purchase and it was love at first crunch. They are tasty and satisfy the need to crunch! I haven’t used them as a dip holder yet, but I’ll be doing that this weekend. If you’re carb free, or just love to snack, check them out and let me know what you think! I should tell you that you can make these yourself, but when I did so, they didn’t turn out nearly as good as the store-bought ones. But if you want to give it a shot, here’s the recipe.
